Jambalaya 或許可以說是美國路易斯安那州的一道名菜， 深受當地西班牙，法國移民的影響，與西班牙名菜 paella 有許多相似之處。 paella 通常被翻譯成西班牙海鮮燉飯，這 Jambalaya 如果也翻成燉飯不知怎麼的覺得有少許奇怪，於是還是依據其他先人的翻譯，叫他什錦飯好了～
•275g steak, cut into thin strips 牛肉條
•4tsp chilli powder 辣椒粉
•2tsp ground black pepper 現磨黑胡椒粉
•4tbsp oil 料理隨便油
•140g chorizo sausage, diced 這一定要買到！長得就這個樣！
•2 celery sticks, cut into 5cm strips 芹菜
•2 red peppers, cut into strips 紅椒
•150g onion, roughly chopped 洋蔥
•2 cloves of garlic, crushed 大蒜
•275g rice 米
•1tbsp tomato paste 番茄糊
•1tbsp ground ginger 薑粉
•2tbsp cajun seasoning 這....下面自己看
•900g beef stock 牛高湯
•salt 現磨海鹽
•8 large peeled prawns 大蝦蝦
•拿個食物保鮮袋把牛肉條，和各一小匙的2＋3丟在一起搖晃均勻。
•拿個鍋把5給炒金黃，加入6+7，等蔬菜都軟了熟了取出丟一邊。
•分批炒牛肉，熟的取出丟一邊。
•炒洋蔥到軟熟，加9-13和剩下的2，再翻攪兩分鐘，加入14+15，煮滾後蓋蓋子，轉小火，悶他個20分鐘，或是等到飯都熟了。
•加16，和剛剛丟在一邊的全部東西，讓米和料攪拌均勻，蓋蓋子等到蝦子熟了就可以吃了。
