(01)先將蜆仔(1斤量)撲平於平底鍋中,加水置淹過蜆仔,約20~30分鐘後,等所有蜆仔微開口,
再打開瓦斯爐的中小火,慢慢加熱至,所有蜆仔不會閉口,(絕不能煮至水開,不然會變成蜆
湯),大約是手可以觸碰的溫熱度即可......

(04)再將蜆仔,另外裝置.... (05)蜆仔加冷水或冰水冷卻.... (06)泡約3分鐘,倒乾冷卻水備用.

(10)倒約1又1/2湯匙的黑醋...(11)把燙蜆仔的水加1碗入鍋中.(12)再放1小匙糖.....
