全熟的牛排,肉質堅硬肉味明顯,適合單寧厚實,個性醇厚的紅酒)
書中又介紹"聖愛美儂(St Emilion)"的特性,酒性肉實圓潤、口感醇厚,主因是該地主要種植美露(Merlot),60%以上,卡本內蘇維翁(Carbernet Sauvignon)較少。此區可尋得黑醋栗、小紅莓、香草、麝香、覆盆子等香氣。

90-93 points Robert Parker. According to the Wine Spectator: "Fresh herb and berry aromas lead to a medium body, with fine tannins and a medium fruity finish. Chewy now. A little bottle age will take away some of the rusticity. Drink now." (03/10) 88-90 points Stephen Tanzer: "Impressive full ruby. Black cherry and licorice on the ripe but rather high-pitched nose. The palate shows very good stuffing but a slight youthful rigidity to the fruit-driven flavors of blackberry and black cherry. Not yet displaying its personality (it's still a bit clenched today), but the wine's ripeness and sappy finish leave me optimistic that this will come with elevage" (May/June '08) K&L's notes - Tasted at property. Ripe and rich. Black licorice flavors. Deep color. A touch short.

紅酒葡萄園佔地25公頃的Chateau Haut-Bergey酒莊,以54%Cabernet Sauvignon和46%Merlot組成的紅酒,以濃郁厚重,需要長時間儲存而出名。白葡萄園佔地只有兩公頃,以82%Sauvignon Blanc和18%Semillon組成,白葡萄酒的評價很高,他以細緻的特性聞名。
Chateau Haut-Bergey在法國波爾多東南方的Pessac-Leognan酒區是有名的。十八世紀的擁有者是Jean-Francois Cresse先生,他不但是波爾多議會的議員,同時也是當時法國政府的財政主管。2000年以後,由Garcin家族買下經營。在Garcin家族以前的擁有者是Jacques Deschamps先生。
1987年,自行成立一個AOC的Pessac-Leognan酒區,在整個Bordeaux知名的AOC產區中,是一個比較不是那麼好行銷的產區。除了知名的五大之ㄧ,Chateau Haut-Brion以外,其它的頂級酒莊(Grand Cru Classe),也都等到1997年以後,才各自出名。
等到Pessac-Leognan的AOC成立二十週年慶的2007年,他們已經可以宣布,這一個酒區的世界知名度,不但大大的提升,同時,代表該酒區的知名酒廠,除了前述的Chateau Haut-Brion以外,還有Chateau La Mission Haut-Brion;Chateau Pape Clements;Chateau Smith-Haut-Lafitte;Chateau Malartic-Lagraviere;Domaine de Chevaliere;Chateau Carbonnieux;Chateau Bouscaut等,各個酒莊,已經都能夠各自地擁有一片天。
Chateau Haut-Bergey雖然沒有進入Grand Cru Classe的行列,然而自從Garcin家族買下了這一個酒莊以後,努力改造,特聘Chateau de Valandraud的主人Jean-Luc Thunvein先生,作為酒莊的釀酒顧問,因此在品質上得以突飛猛進。並且在派克先生的高點數支撐。

"Good ruby-red. Currant, black raspberry, cocoa powder and graphite on the nose. Silky on entry, then impressively sweet in the middle palate, with classic Pauillac flavors of currant, chocolate and graphite dominating. This boasts the sharp focus of the vintage's best examples but can't quite match the 2006 for consistent ripeness and mid-palate depth. Tannins are quite firm and in need of six or seven years of patience."

The 2003 is a dense, corpulent effort with a dark ruby/purple color, impressive intensity, and aromas of charcoal, white flowers, blueberries, black currants, and smoke. Medium-bodied, with light tannin, and serious concentration as well as length, it may merit an even higher score than shown. Anticipated maturity: now-2018.

Some aromas of cooked fruit and earth. Medium-bodied, with fine tannins and a medium finish. Slightly hot but a velvety and good wine. Best after 2006. Tasted twice, with consistent notes. 5,250 cases made.

This winery is situated close to the Pomerol border and is directed by the talented and famous Michel Rolland. The nose is full of blackcurrant, vanilla, olive, black cherry, chocolate, expresso aromas. It is full, spicy and very pure on the palate
Parker # 134 (4/1/2001) : 90 Maturity: -2015The 1998 is a soft, fat, voluptuously-textured, opulent effort with a dense ruby/purple color, and gorgeous aromas of olives, black cherry jam, blackberries, chocolate, and espresso. This full-bodied wine is hedonistic, flashy, and nearly decadent in its display of luxurious fruit, high glycerin, and spice.
Wine Spectator (James Suckling) (1/31/2001) : 90 Maturity: 2005Solid, with complex aromas of blackberry, violet and berry. Medium- to full-bodied, with silky tannins and a black olive and cherry aftertaste. Very good indeed.
5.甜白酒Chateau Bastor-Lamontagne (Sauternes) 2004
60% Semillon, 36% Sauvignon Blanc, 4% Muscadelle
Blood oranges, something I seem to find in every vintage of Bastor! Rather lifted and certainly fresh on the nose. Light in style on the palate though, fresh and lean, crisp acidity, peppery. Firmly styled, no seductive fat here. Merely good. From my 2004 Bordeaux assessment. 15/20 (October 2006)
